Hi! I’m Fiona, the baker and miller at Fiona’s Little Loaf.
My mom doesn't feel her best after eating wheat, so she stopped eating it. One day we watched a video about people like her that bake with freshly milled organic wheat and don't have any problems, and I thought, "Why don't we try that?"
My dad bought me a mill, my mom ordered organic wheat berries, and then we experimented with recipes. Soon I had filled our kitchen with bread and cookies.
Every loaf, cookie, and bag of flour is made with certifed organic grains that I mill fresh myself.
I do the baking, but we work as a family. My mom helps me with the business stuff (she's an accountant) and my dad is a Certified Food Protection Manager, so we make sure that we are following Illinois cottage food regulations and safe food handling practices.
